Christmas Cooking – White Rocky Road

So this is a completely different post for me but I really wanted to share with you all a Christmas treat that I make with my mum every year. It’s a recipe from who knows where, a magazine or book that we came across ages ago and have made it ever since. It’s a different take on the traditional rocky road and is always a massive hit with family and friends. 

I really hope you enjoy this post and found it easy to follow along. 

Step 1

Line a slice tray with baking paper and set aside.

Step 2

Mix the following ingredients into a large mixing bowl.

300g Marshmallows – roughly chopped

50g Desicated Coconut

400g Turkish Delight – roughly chopped

1/2 cup (75g) of Blanched almonds and the same amount of toasted shelled pistachios – roughly chopped

Once all of these ingredients are all mixed together go to step 3.

Step 3

Melt 450g of White chocolate (I placed in bowl and used a melt chocolate setting on my microwave) then quickly mix melted chocolate into the bowl with the other ingredients until completely covering all ingredients.

Step 4

Transfer mix from mixing bowl into lined slice tray, making sure the mixture is layer out evenly in the tray. The refrigerate until set and cut into desired pieces.

And you are done!
